Heatily's Spicy Pesto Watermelon + Mint Salad

As refreshing as it is colorful!

This light and fresh summer recipe will keep you cool by the pool...with a lingering little kick from the pesto to keep things spicy ;)


  •  Heatily's "The Pesto"
  •  1 Medium Watermelon
  •  1 Beet
  •  1/4 Red Onion
  •  2 Persian Cucumbers
  •  1/2 cup of Feta
  •  Fresh Mint
  •  2 tablespoons of Olive Oil
  •  1 tablespoon of Fresh Lemon Juice (buy a fresh lemon at your local farmers market!)

Encouraging all ingredients that can be sourced from your local farmers market to be prioritized over the big grocery stores- support your local farming community!


1. First combine feta and pesto (amount of pesto based on your preference, we recommend 2 tablespoons).

2. Chop up watermelon in generous square chunks, chop cucumbers in quarters, beets into small quarters, and slice the red onion finely.

3. Combine all the ingredients in a bowl.

4. Mix olive oil and fresh squeezed lemon juice, then drizzle over the ingredients in the bowl. 

The salad is done! Best use after allowing to cool in the fridge for 20 minutes.

5. Finely chop fresh mint to top each individual portion upon serving. 

Yields about 6-8 servings. Total prep time under 10 minutes.
